On-the-Go Meals: Spinach Salad

As you may know, it can be so hard to maintain a healthy lifestyle when you’re constantly on the go, like me! So, I have a couple of go-to, tried and true recipes that I lean on when I’m on the move. Below is a simple, fresh spinach salad recipe that you can pull together in minutes with basic ingredients from your pantry and fridge!

Ingredients

  • 2 cups, fresh spinach leaves

  • 2-4 ounces each, fresh veggies – bell peppers, carrots, grape tomatoes, mushrooms, etc. Hint: any veggies will work here, so feel free to pack on your favorites!

  • ¼ cup dried cranberries – I like the Ocean Spray kind

  • ¼ cup roasted sunflower seeds (no shell) to give your salad a little crunch without having to add salty/carb-heavy croutons

Now, depending on if you’re vegan or not, you can skip the eggs. If I’m in a hurry, I usually don’t add the boiled egg, but that’s the great thing about fresh salads – you can literally add or remove any/everything!

I drop all the ingredients into a bowl, add in my fav dressing and/or olive oil and vinaigrette and enjoy!

You’ll be surprised how filling this simple salad can be and just how good you’ll feel after chomping down on some fresh, green veggies.

Trust me guys, if I can get my never-will-I-ever-be-a-vegetarian, meat-loving fiancé to eat this salad for dinner without meat, it’s definitely worth a try!
